Menu Monday ~ April 17, 2017

How was your weekend? Did you have a nice Easter (if you celebrate)? I had my parents over for a turkey dinner yesterday after church. I know ham is more traditional but I just happen to really like turkey. I’m cooking a small ham on Wednesday, however. Let’s see what else is on the menu, shall we? 

Menu Monday

Dee’s Menu

Monday

I cooked a small turkey breast for Easter so I’ll use the leftovers tonight. 

  • turkey and noodles

Tuesday

  • Lentil Tacos (an Instant Pot recipe)
  • salad
  • tortilla chips and salsa

Wednesday

  • baked ham
  • cauliflower in white sauce with cheese
  • salad
  • peas
  • baked apples

Thursday

We have an evening meeting at 6 p.m. We just can’t eat early enough to be able to do so before this meeting yet I know we will be hungry by the time we get home. That’s why I’m making a big meal on Wednesday. We’ll just heat up leftovers when we get home. 

Friday

  • Busy Day Swiss Steak
  • baked potatoes
  • salad
  • steamed broccoli

Saturday

I have an out-of-town event to attend and am not sure what time I’ll be home. I think I’ll get David to take me out to dinner. 

Sunday

The usual – Mexican food after church and save half for dinner.

I am loving my Instant Pot. Not only is it a pressure cooker but it can also be used as a slow cooker. The best part is that it also has a sauté feature so I can brown meat in it first then switch to slow cooker. That means one less pan to wash…always a good thing!

      I ended up switching to turkey tetrazzini last night but it was delicious. And tonight I’m doing lentil rice in burritos. Sometimes I switch things up a bit – ha! Have a beautiful week!

    I haven’t had baked apple in ages… Now you made me want some!

    It’s difficult for me to make a menu plan right now. I’m not that great at sticking to it normally anyhow, and I’m having to do a lot of playing it by ear on what’s happening when right now. I’m glad the landlords have repair guys who are finally taking the job of fixing things up seriously, and that I’m not the one who has to pay for the work to be done. On the other hand, I wish the workmen/repair guys would go away.

      How much longer will the workmen be with you? That has to be frustrating. We will soon be dealing with roofers after that hailstorm. I’m not looking forward to that. They won’t be in the house but the noise of men stomping all over the roof is pretty hard to ignore. I think I need to invest in a good set of noise-canceling headphones – ha!

      As for the baked apples, until I made them for my 1950s menu week I hadn’t made them since the early days of our marriage. They were really good, though, and easy!
