Are you ready for a new week? I got a few things done this weekend, including organizing and putting away our Christmas decorations, and that seemed to give me a bit of a boost. Let’s see if it lasts through the week! Now, let’s take a look at what is on my menu for the week.
Dee’s Menu
Monday
Tuesday:
- lentil tacos
- Mexican rice
- salad
Wednesday:
- Homemade mac and cheese with caramelized onions
- green beans
- salad
Thursday:
- gumbo
- rice
- homemade potato salad
Friday:
- black bean burgers on homemade buns
- all the “fixin’s” – lettuce, tomato, cheese, mayo, etc.
- sweet potato fries
- leftover potato salad
Saturday:
Sunday:
- lunch out, save half for dinner

Wednesday: veggie shepherd’s pie with sprouts.
Thursday: leftovers from Wednesday.
I haven’t decided what I’m doing for the rest of the week yet.
