I need to use the two green tomatoes I bought at the farmers market. The noodles are from the Amish Auction I recently attended and the green beans are from the Oklahoma Food Coop. I had one organic chicken breast in the freezer which will be just the right amount for chicken and noodles.
- fried green tomatoes as an appetizer
- chicken and noodles
- fresh green beans
I have leftover ham, some pineapple slices and a few black olives in the fridge so pizza seems like a good way to use them up. I have three activities Tuesday afternoon and won’t return home until about 6:30. My plan is to make the pizza crust in the morning, partially bake it, let cool, put on the toppings and then refrigerate. When I get home I’ll just stick it in the oven and make a salad. Easy!
- homemade pizza with ham, pineapple, caramelized onions and olives
I have a ripe avocado in the fridge which means…Mexican food!
- black bean enchiladas
- seasoned rice
- homemade guacamole and chips
This just sounds good and the asparagus needs to be used.
- sweet and spicy shrimp
- cheesy grits
I try to fix an extra special meal for David on Fridays. I bought a nice, grass-fed steak from the Oklahoma Food Coop which is plenty large enough for two.
- whiskey glazed carrots
- baked potatoes
