Can anyone guess why I am using a picture of café au lait and beignets for this post? Yep, I’m going to New Orleans again. A friend of mine has a week in a time-share condo starting this Friday. She really didn’t want to go alone so I’m making the supreme sacrifice and going with her. She will be spending Wednesday night at my house and we will leave Thursday morning, then returning the following Thursday. David has to leave for a business trip early Tuesday morning and won’t be home until late Wednesday. That means there won’t be much of a menu this week, and none next week. I will probably post some pictures of delicious New Orleans food while I’m away so keep an eye out for those.
- potato leek soup (didn’t end up making it last week)
- apple carrot flaxseed muffins (from local organic bakery)
- leftovers (David will be out of town)
This will be a busy day getting ready for my trip so a crockpot meal is a good plan. Plus this will provide some leftovers for “the boys” after I leave.
- roast with potatoes, onions and carrots in the crockpot
- green beans
We will spend the night in Shreveport and then drive the rest of the way to New Orleans on Friday. I can hardly wait!
