I have a busy week ahead but I’m still determined to eat at home as much as possible. That’s where a menu is important. We are really trying to focus on healthy eating and that’s pretty hard to do when eating out. I’m also getting back to making green smoothies for breakfast and am going to send healthy lunches to work with the guys. I also have six meetings or appointments this week in town so I really need to have my act together if all this cooking is going to happen. Wish me luck!

Glad to see you getting back to making menus. I’d have enjoyed your Monday night dinner, and am interested in hearing more about those tocco boats.
What kinds of things do you send with the guys for healthy lunches? Just curious.
In the past it’s been mostly leftovers. I recently bought some divided containers so I can send salads and keep the ingredients separate until they are ready to eat. The plan is to have a variety of things on hand that they can add to salad greens. I’ll have all the ingredients prepped and they can put together what they want each day. At least that’s the idea. 😉
I love the idea of baking potatoes, and putting out bits and pieces to go with them. I eat on my own most evenings, so it is very easy for me to just make sure that I have a few vegetables and some protein, on hand. I do admire that you sort out the food, all the menus look delicious.
We really enjoyed the potatoes. I should definitely do that more often. When David is away on business trips I am not very likely to plan my meals ahead so I totally understand what you are saying. Thanks for your comment. 🙂
