This is going to be an ultra-busy week! This coming Saturday is AdaFest, the huge music festival our town puts on. We are on the organizing committee and in charge of the music. I also do a lot of the social media marketing. We’ve put in countless hours and I’m really excited about it. And exhausted – ha! This week’s menu features easy meals, as you might expect.
Dee’s Menu
Monday
I’ve got a small sliced ham in the freezer. Mondays are always busy days for me so an easy meal is a good plan. I’m also still working on clearing out the freezer.
- ham (in the Instant Pot)
- baked beans
- corn on the cob
- coleslaw
- baked apples
Tuesday
Another meal using up things on hand. I’ve got grass fed beef in the freezer, along with corn tortillas. I’ve also got a carton of organic refried beans, as well as chips and salsa in the pantry.

- leftover coleslaw
Wednesday
I know there will be leftover ham so I’ll make a pot of soup with it, along with various veggies, including some from the freezer.

Thursday
Again, this meal features items from the freezer – chicken and peas.

Friday
We will be in crunch mode for AdaFest. I’m not even going to pretend I’ll want to cook this night. I’m thinking this would be a good time to pick up sushi.

Saturday
The big event! We will be busy all day and into the night. There will be 10 food trucks so we’ll try to find a moment to grab a bite to eat from one of those.
Sunday
This is my birthday but I suspect we will be utterly exhausted. We have reservations at our favorite hotel in Oklahoma City next weekend to celebrate. I have no idea what we will do about food this day but I do know I won’t be cooking – ha!

Hope the festival goes well, and that you enjoy your birthday.
Here’s my menu for this week:
Monday: Cheese and spinach pasty and fries, followed by fruit.
Tuesday: Potato croquettes and mixed vegetables.
Wednesday: I’ll make enough on Tuesday so I can have the leftovers for Wednesday’s dinner.
Thursday: Salad in pitta bread.
Friday: Quiche with mashed potatoes and beans.
Saturday: There will be enough quiche for two days dinner, so I’ll make extras of the other stuff too so I can have that on Saturday.
Sunday: Veggie breakfast wraps.
