Monday:
Today I am participating in an event sponsored by our city’s Multicultural Committee in honor of MLK day. We are meeting at the university at 8:30 a.m. (yikes!) and then the volunteers will be fanning out across town to pick up litter. It is supposed to be chilly and breathing cold air isn’t good for my asthma. So I volunteered to be the one to pick up the bbq for lunch and help get things set up at the church where we will be hosting a lunch for the volunteers. After it’s over I need to pick up a couple of things at the store for a dish I’m making tomorrow so I probably won’t be home until mid-afternoon. I figure an easy dinner is a good idea on a day like this.

Tuesday:
I volunteered to make a vegetable dish for Compassion Outreach and need to have it to our church by 4:00 p.m. Actually, I may take it earlier depending on how my day is going. I need to figure out the timing for the rising of the pizza dough and work that around it. At the time I’m writing this I haven’t decided what vegetable dish I’m making as that will depend on what is available at the store Monday afternoon. I will probably make an extra amount to go with our own dinner if it’s something that sounds good with pizza and salad.

Wednesday:
I’m trying a new-to-me black bean burger recipe this time. If it turns out well I’ll share it. I need to bake some bread so I’ll probably make one loaf plus the buns. I’ll just bake white bread (from unbleached organic flour) this time rather than my usual 6 loaves of wheat bread. That’s because my freezer is still too full to hold 5 loaves of bread.

Thursday:
- Masoor Dal (spicy red lentils) – will be sharing the recipe Friday as a guest post
