Monday:
I had to run an errand and David had a fire fighter meeting at 6 p.m. so I made it easy on myself and picked up bean burritos and fries in town. That means no kitchen clean-up tonight. Yay!
Tuesday:
I am volunteering at the local soup kitchen whose board I serve on. I will be there from 2-7:30 p.m. so an easy crockpot meal sounds like a good idea.
- roast, potatoes and carrots in crockpot
- salad
Wednesday:
- black bean Mexican casserole
- Mexican rice
- salad
Thursday:
- baked ziti
- fresh green beans
- salad
- garlic bread
Friday:
- baked chicken with Bruschetta Topping
- mashed potatoes
- broccoli
- salad
Saturday:
- leftovers (there should be plenty of chicken and probably several other items)
Sunday:
If the kids are available we’ll do Sunday Family Dinner.
- grilled hot dogs
- macaroni salad
- chips and dip
- homemade ice cream

My menu for this week will consist of the same stuff from last week, but in a different order.

True… Some weeks are like that. Funny thing is though, last week didn't go as planned, and my menu ended up looking like this:
Monday: cheesy egg and bean wraps.
Tuesday: cheesy potato skins with beans and garlic mushrooms.
Wednesday: marmalade on toast and some fruit, because I was just too tired to make anything more after a meeting I had in the afternoon.
Thursday: veggie burger and fries.
Friday: cheesy fries with vegetable gravy.
Saturday: salad.
Sunday: salt and pepper bean curd, sweet and sour sauce, and boiled rice.

How do you make the cheesy egg and bean wraps? Sounds yummy.

Scramble some eggs, and add a little cheese to them when they're not quite cooked. Then put some beans, some more cheese, and the cheesy egg mixture in tortillas. Heat them (in the microwave or oven) for long enough to melt the cheese a little. Then just enjoy!
