Monday:
We have leftovers from last night’s Sunday Family Dinner so no cooking for me tonight!
- grilled organic hotdogs
- homemade potato salad (my mom made it)
- layered salad
- asparagus
- grapes
Tuesday:
- big salads with bacon, hard boiled eggs, cheese, croutons, tomatoes
- ice cream
Wednesday:
- homemade macaroni and cheese with caramelized onions
- green salad
Thursday:
Our church is hosting a Seder Supper so we will be eating dinner there then attending the Maundy Thursday service afterwards.
Friday:
- Chicken Marbella
- steamed rice
- salad
Saturday:
I will be cooking a meal with planned leftovers for our Easter Sunday lunch.

- deviled eggs
- baked beans
- asparagus
- rolls
Sunday:
We always go to my cousin’s house for Easter dinner after church. They are picking up KFC for those who want it but since I just honestly do not care for KFC I will be bringing our own lunch. I may bring some type of dessert to share with the group but haven’t decided what yet.

I suspect the kids will all be busy elsewhere for the evening meal so I’m not planning on them being here. We will have eaten a big meal at noon so we’ll likely fix something light and easy. I gave up French fries and whiskey for Lent so perhaps that will be my dinner. Ha!

Both my Mam and my hubby love KFC, but I never even liked it all that much when I still ate meat, and my Dad – who still does love meat – isn't really that keen on KFC either.
I rarely plan desserts as part of my menu; they're just something I grab if I want something, as a rule. I've usually got something – mainly things like fresh and dried fruit, and nuts – on hand, and will make or fetch something else at the time if I want it that badly.
Anyway, my menu…
Monday: cheese and potato pie with broccoli.
Tuesday: minted new potatoes, carrots, peas, and sweetcorn.
Wednesday: stuffed mushrooms, baked potato, cheese, and beans.
Thursday: we're eating out, because we're making the trip we make about every four weeks in to town itself, and will either eat out while actually in town, or stop at one of the local cafes on the way home to eat; I know I'll be too tired to make anything by the time we get home.
Friday: lentil toccos (since I didn't end up making them last week).
Saturday: veggie omlet and fries.
Sunday: garlic roast potatoes, with whatever veggies I pick up to go with them; I haven't decided for sure yet.

I don't generally include dessert with our meals, either. We don't need the extra calories! Last night, however, I did plan dessert. We had salads for dinner so I felt justified in serving ice cream for dessert. Now that it is warm here I had a hankering for ice cream.

Fair enough about the ice-cream! Besides, dessert doesn't hurt from time to time; especially if dinner was salad.
