Last week started out with pretty close adherence to my menu plan but fell apart on Friday. Oh, well. Some weeks are like that!

Monday
- Macaroni and Cheese with Caramelized Onions

Tuesday
- Lentil Tacos
- Mexican rice
- chips and salsa
Wednesday
I’m going to the farmers market in the morning so I’m planning a dinner of fresh veggies.
- green beans and new potatoes
- yellow squash casserole
- salad
- fresh fruit
Thursday
We had to miss our son-in-law’s birthday dinner this past Saturday because David developed cellulitis in his foot. Hopefully we can take them out to dinner Thursday.
Friday
We didn’t get our romantic Friday dinner last week because of David’s 6 hour visit to the E.R. We’ll try again!

Saturday
We will be attending a crawfish boil fundraiser for the local homeless services organization I volunteer with.
Sunday
Hopefully lunch out somewhere. Or dinner. In other words, I don’t want to cook. Ha!

Sorry to hear about David. I hope that’s the end of his issues for a while.
Here’s my menu:
Monday: pasta with tomato sauce and cheese.
Tuesday & Wednesday: leek and potato pie with green beans.
Thursday & Friday: spinach and mushroom risotto.
Saturday: I’m not sure, but it will be something simple – probably involving fries – because I have roleplaying.
Sunday: it’s our wedding anniversary, and we usually have take-away on special days like birthdays and anniversaries. We haven’t decided what we’ll order though… Depends what we fancy on the day.

Here are the main meals for my menu this week. It’s not a full week because I eat the same thing for 2 or 3 days, but I’m easy to please!
Woolton pie (a recipe I discovered and love from my WWII rationing days. Lasts several days)
Lentil soup (made a big pot — will last several days)
BBQ chicken and cauliflower cheese
Chicken sauted in sparkling apple juice, sauted kale, pickled red cabbage.

Woolton pie? That sounds interesting. I will have to look for a recipe. Or if you’d like to share yours that would be great!

Woolton pie is so yummy! It is essentially cooked root vegetables (potatoes, turnips, carrots, onions, parsnips, celery, and the like) with a little oatmeal added for thickening. Put in the bottom of a pie dish and cover with a pie crust. Bake for about 30 minutes at 350, until the crust is brown. Serve with brown gravy. A very comforting dish. Here is my favorite version of the recipe. (Note — I am incapable of making pie crust. INCAPABLE!
