This is going to be a ridiculously busy week. This coming weekend, starting Friday evening, we will be hosting our 5th annual Happyland Music Festival. Somewhere around 100 people will be coming to enjoy two nights of music, as well as a camp-out. Don’t worry; I won’t be camping. 😉 We have so much to do to prepare for this event. It rained yesterday so the planned mowing didn’t get done, although Chris did some weed-eating around trees and David filled holes and repaired our outdoor water faucet.
Most of the yard work will be done by the guys but I do need to finish weeding and planting the rest of my tomato plants, as well as plant some flowers out front. I need to give the back patio a thorough cleaning and wash the windows. I also need to have the guest bedroom and bathroom ready for a friend who will be staying with us over the weekend. She loves this event but shares my distaste for camping so I offered her a comfy spot indoors.
So, needless to say, I’m taking this all into account when it comes to meal prep this week. I’ll be making enough lasagna tonight for lunch leftovers and will be making two big pots of jambalaya Tuesday so I can freeze most of it for the weekend. Everyone loves my jambalaya so I thought I’d make some to share during the festival. The meals then get easier for the rest of the week!
Monday:
- lasagna
- green beans
- garlic toast
Tuesday:
- jambalaya
- potato salad
- French bread
Wednesday:
- grilled hot dogs
- potato salad
- chips
Thursday:
- take out pizza
- salad
Friday:
- sandwiches or leftovers before the big event starts!
We will have two grills set up for the weekend and everyone will bring whatever they want to eat. I’ll have burgers ready for the grill for us and of course there will be jambalaya to share.
