We have a busy week ahead of us and not much cooking for me.
Monday:
We have a dinner meeting at Applebee’s.
Tuesday:
We have our Fantasy Football Draft at our favorite Italian restaurant. It’s not until 8 p.m. but I have a city council meeting to attend at 5:15. If it finishes early enough I’ll run home and fix a quick dinner. If not, David will meet me in town and I guess we’ll eat out. Again.
- quesadillas
- homemade tomato soup
Wednesday:
I have piano at 5 p.m. and will stay in town for choir rehearsal at 7. Our church Wednesday night potluck starts at 5:30. We haven’t decided yet if we will attend. In either case, something I can make in the slow cooker makes sense.
Thursday:
Lisa and I are doing our monthly grocery shopping trip. We plan to go to Oklahoma City this time so we can hit Whole Foods. Our guys will be on their own for dinner. It wouldn’t surprise me if they meet up for dinner somewhere.
Friday:
My mom wanted to do something for my birthday which was August 27th. We finally found a day that works. She’s having us over for her delicious tacos. Yum!
Saturday:
I plan to indulge in lots of end-of-the-season produce when I go shopping Thursday so we’ll make a meal out of it on Saturday. I’m hopeful that there will still be some good, fresh corn-on-the-cob as well as summer squash and tomatoes. I’ll just prepare a meal out of whatever I’ve found. Summer produce is one of those things I miss during the winter so I want to take advantage of it while I can.
Sunday:
We will most likely eat at our favorite local Mexican restaurant after church and save half for dinner as we usually do.

So, what’s on your menu this week?
Tori says
Monday: home made pizza
Tuesday & Wednesday: mushroom crisp bake with root vegetable mash and broccoli
Thursday & Friday: seaweed wraps and sweet & sour bean curd with rice.
Saturday & Sunday: I haven’t decided for sure… I’ll decide when I have to go get the veg to make it at the end of the week.
