We are in the final countdown for our annual blow-out, Happyland Music Fest this coming weekend. David had to make an emergency trip to his Enid location today and won’t be back until late tonight or tomorrow. I’ve got choir rehearsal Wednesday night and honestly this whole week is going to be hectic. I decided that instead of planning meals as usual, I would just cook or prep a number of items/dishes and let everyone fend for themselves. David and Chris will be doing yard work in the evenings until dark so a big meal that late isn’t very appealing. And neither is the cleanup!
So far today I have diced several small red and yellow bell peppers which I have in glass jars in the fridge. I peeled and sliced some carrots, and cooked two packages of baby carrots which I had bought for another purpose and didn’t use. I made a small batch of soup from kale and white beans (this recipe came from a friend and I will share it this Friday as a guest post). As I type, I’ve got brown rice in the rice cooker and a dozen eggs boiling.
I’ll also prep and wash salad greens, cook some pasta, grate some cheddar cheese and thaw a loaf of homemade bread. I’ll make a fresh batch of yogurt and make sure we have plenty of fresh fruit on hand. I might make a batch of coleslaw or potato salad. We have plenty of flour tortillas for a quick quesadilla and I might make some tomato bisque soup, too. Oh, and I also have about half of a large head of cauliflower which I cooked night before last. I plan to make a cream of cauliflower soup from the leftovers.
We are all adults here and I figure that if I have all these things cooked or prepped, we can make do this week without me having to do a lot of cooking and kitchen cleanup. What sorts of things do you like to keep on hand for quick, do-it-yourself meals?
