I’m trying to come up with some light/low calorie meals for this week. Tonight I’m making lemon pepper chicken but I’d love some ideas from my readers for the rest of the week. If I use your idea I’ll link back to your blog. I should mention that I cook almost entirely from scratch and don’t buy stuff with HFCS or hydrogenated fats. I have an extensive collection of herbs and spices but don’t use packaged seasoning mixes (onion soup mix, taco seasoning, etc.). I’m allergic to mushrooms but we’ll eat most other vegetables. David isn’t too keen on fish or seafood but might eat shrimp on occasion.
So, send me your favorite healthy/low calorie main dish recipes!

Ferakh bel Tamatem
sauteed chicken breasts with tomatoes
Serves 4
1 tablespoon butter
1 tablespoon sunflower or vegetable oil (I use canola)
4 boned chicken breast halves, with or without skin (I use skinless boneless breasts successfully)
salt and pepper
4 cloves garlic, crushed (add more if you like lots of garlic)
1 pound tomatoes, peeled and cut into small pieces (I use one large can of diced tomatoes just fine)
1-2 teaspoons sugar
1/2 teaspoon cinnamon (I love cinnamon, so I just dump it in)
Heat the butter with the oil in a skillet. Put in the chicken breasts, season with salt and pepper, and brown them lightly on both sides. Add the garlic, tomatoes, sugar, and cinnamon. Cook for 15-20 minutes, or until the chicken is done but still juicy.
Sorry they are all chicken, but that's what I eat/make when I want to make a healthy dinner : )

Donna: Thanks for the links and recipes. The Orange Curried Chicken sounds especially good — I think I’ll give that one a try this week.
La Belette Rouge: A really fine cup of French pressed coffee with warm milk makes a perfect breakfast but I suspect my guys expect more for dinner. 😉
