Donna from Random Thoughts of a Fiery Woman shared some recipes per my request yesterday (check out the comment section). I’m going to give one of them a try this week. Here is my belated weekly menu, including what we had last night.
M0nday:
- Lemon Garlic Chicken*
- broccoli with freshly grated parmigiano reggiano
- tossed green salad
*Lemon Garlic Chicken*
2 tbsp lemon juice
1 tbsp cooking oil (I used olive)
2 cloves garlic (or more!)
1 tsp lemon pepper seasoning
1/4 tsp oregano and a pinch of cayenne pepper (I used a healthy sprinkling of Creole seasoning rather than cayenne)
4 portions of boneless/skinless chicken breast
Put all ingredients except for chicken breast into a bowl and mix well. Pour mixture over chicken breasts and marinate for a minimum of 30 minutes. Grill on med-high for a total of about 15 minutes or bake in 400F oven for 20-25 minutes.
Tuesday:
- Super Nachos (baked tortilla chips, seasoned ground beef, lettuce, tomato, green onions, cheese, salsa and sour cream
Wednesday:
- Choir rehearsal night; guys are usually on their own but I might make up a pasta salad
Thursday:
- Orange Curried Chicken
- rice
- asparagus or green beans
- salad
Friday:
- Angel’s Pasta
- Pioneer Woman’s Chocolate Sheet Cake (just kidding, but doesn’t it sound good?)
