David had picked up some barbecue on Saturday and we still had a lot of brisket leftover. I made homemade hamburger buns (recipe in the Better Homes and Garden cookbook) and we had yummy brisket sandwiches. I had fully intended to make potato salad and had even hard cooked the eggs earlier in the day. However, the day somehow got away from me and by the time I got the potatoes done, David was home. We elected to have mashed potatoes instead which was tasty, too. I had baked cookies Friday so that’s what we had for dessert while watching Golden Girls together.
Tuesday:
- macaroni and cheese with caramelized onion topping
- glazed carrots
- spinach salad with fresh strawberries
I have a (hopefully) brief meeting at 5 p.m. tonight so I wanted a meal that could be mostly prepared ahead. I’ll cook the carrots sometime today and refrigerate. They can be reheated quickly in the microwave. I’ll put the macaroni and cheese together, cover tightly and put in the oven on warm just before I leave for my meeting. When I get home I’ll remove the foil, add some grated cheese and bread crumbs then broil until the cheese is hot and bubbly. The strawberries are already hulled and sliced so the salad can be prepared in a jiffy.
Wednesday:
- tacos with bean/corn filling
- sliced tomatoes
- tortilla chips and salsa
I have corn tortillas in the freezer and a few ears of fresh corn which I’ll cook and cut off the cob for the filling. My mom shared some fresh tomatoes that came from a friend’s garden. There’s nothing quite like home-grown tomatoes, is there?
Thursday:
- baked beans with corn bread topping
- potato salad
- salad and/or fresh veggies from Farmers Market
