Well, obviously I didn’t get a menu out on Monday. I’m not even starting this until after 9 p.m. on Tuesday. But I have a good excuse. We were in New Orleans this past weekend and didn’t get home until last night. And then my plans for dinner tonight fell apart when my washing machine discharged its contents and flooded the kitchen and part of the carpeting into the family room. Our darling kitties were the responsible parties for that little episode. While we were away they apparently got bored and dislodged the washing machine drain hose from the drain. Good thing they’re cute! And good thing I have a sweet husband who offered to bring home dinner tonight when he found out I’d spent over an hour sucking up water from the kitchen floor and carpeting with our Rainbow vacuum.
I’m not sure whether it’s even worth writing a menu post this week but it’s a habit so here goes:
Monday (yesterday):
- David and I ate dinner at Charleston’s in Norman on our way home from the airport. We both had the potato soup and salad combo.
Tuesday:
- My awesome husband picked up ribs, brisket, potato salad and coleslaw.
Wednesday:
- I have a hair appointment at 1 p.m., co-op pick-up in a nearby town at 4:45 and choir rehearsal at 7 p.m. I won’t be home until at least 8:30 so everyone will have to do their own thing for dinner.
Thursday:
I have a board meeting at 5:30 p.m. and I’m not sure how long it will run. I’ve got some ricotta I need to use so I think I’ll make a veggie lasagna. I can prepare it early and have it in the oven before I leave. The guys can eat whenever they are ready and I’ll eat when I get home.

- tossed salad
- garlic bread
Friday:
- buttered Yukon Gold potatoes
- spinach salad with fresh strawberries and balsamic dressing
- sliced tomatoes
- ice cream (Summer is drawing to a close and I don’t think I’ve bought any ice cream yet!)
