I tried a veganized version of the scalloped potatoes recipe, which was really nice.
I’d definitely be interested in a series of vegetarian or vegan recipes (especially vegan, but vegetarian ones are very easily adaptable just by switching out milks and cheeses as a rule, so those too). But I’m actually interested in any recipes you care to share, since they all act as inspiration anyhow, and can be adapted with some creativity.

I’m glad to hear the scalloped potatoes turned out well. Vegetarian and vegan recipes are definitely on my list, especially since our son is currently vegetarian and he eats with us several times a week. He doesn’t expect me to change my cooking for him and he keeps vegetarian options on hand in the freezer. But I enjoyed our year of eating vegetarian, largely because it encouraged me to get creative in the kitchen.
