THIS WEEK WITH DEE
Pour yourself a cup of coffee, tea or your favorite beverage and let’s enjoy some soft jazz while we talk about “this week”.
MENU:
Monday…
I like to plan an easy dinner with minimal cleanup for Mondays since that’s usually a busy day for me. The frozen veggie burgers from Aldi are a simple choice as they can bake on the same sheet pan with the frozen fries. I serve them on brioche buns with caramelized onions, lettuce, tomato, cheese and whatever condiments each person prefers (I like mayonnaise on mine).

Tuesday…
This recipe for enchiladas calls for flour tortillas but I’ve got corn tortillas which really need to be used so that’s probably what I’ll do.

Wednesday…
We have some banking and a couple of other things to do in the afternoon so I’ve got a relatively easy meal planned. I might make the squash casserole earlier in the day and then reheat it. The baked chicken and asparagus will go on the same sheet pan although I’ll start the chicken first and add the asparagus toward the end of the cooking time.

Thursday…
If there is any leftover chicken from Wednesday I’ll shred it and add to the broccoli rice casserole.

When David and I were in town Sunday we drove past the Chinese restaurant and he mentioned that we hadn’t had that in awhile. I was more than happy to tell him I’d put it on the menu this week.

After I made our menu which is posted on the blog sidebar, David decided we would leave on his next business trip on Sunday rather than Monday.

IN MY HOME:
REVIEW OF LAST WEEK
Have you ever had a week where you just can’t figure out exactly what you did even though you know you didn’t just nap every day? That’s the way it was last week. I know I had a couple of Zoom calls and I picked up a grocery order on Friday. Oh, I did do a very thorough refrigerator cleaning on Tuesday!
I baked my mom’s favorite cookies – Oatmeal Krispies – on Saturday and took them to her for Mother’s Day. And we took our son-in-law his birthday gift. We picked up Italian food for dinner that night. On Sunday, David and I took my car to town for a thorough wash and cleaned the interior very well. He was going to do it himself for me as a part of my Mother’s Day gift but I decided to go along. David had bought some interior cleaner for his truck and brought it along. It all looks so nice and clean and shiny! It makes me happy to drive a clean car.
THIS WEEK
I have a few Zoom calls, the appointment at the bank and am taking my daughter to get some blood work done tomorrow. Otherwise I’ll be focusing on getting ready to leave on Sunday.
WORK
This is my second blog post today. I don’t know if I’ll get anymore done before we leave. I’ve got quite a bit of the social media scheduling for the rest of the month done and will finish that up this week.

SELF CARE
My planned self care for last week was to color my hair. I meant to do it this weekend but just didn’t get around to it. However, I MUST do it before we leave on Sunday.
HEALTH & FITNESS
I don’t want to talk about it. Ha!
FUN ACTIVITIES
Last week I said I was going to start a puzzle and I did! So I’ll continue working on that. This weekend I watched several episodes of Hazel, an old favorite. I just love old shows like that!
HABIT OF THE MONTH (May)
Do you want to guess how this one is going? Let’s just say that on both Friday and Saturday nights it was 2 a.m. before we turned out the lights. What is wrong with us?! But hey, we were asleep by midnight last night so I suppose that’s progress.

I know what you mean about those kinds of weeks where you were busy but can’t figure out where half that time was actually spent. I know in my case it was mostly spent dealing with paperwork, schedules, phone calls, and emails, with some Zoom calls thrown in.
Good luck with the coming week, and I hope the trip goes to plan.
I have no idea how my week is going to go. I have Zoom calls on Tuesday and Thursday that I need to be at, and on Tuesday and Saturday that I’d like to be at (yes, saying Tuesday for both those categories was intentional) but beyond that… Well, since I’m currently dealing with my Mother’s dogs along with my own, and I’m not sure how long I’ll be doing so for, I can’t really be sure how my week will go, since some of the things I would have liked to do are harder to do with four dogs to keep track of (especially when one of those is a still not properly trained puppy). And my menu is essentially whatever I can make easily while dealing with them.
