Menu Monday ~ April 10, 2017

We have another busy week ahead of us but we also get a nice little mid-week trip to the city which I’m really looking forward to. And of course, we have Easter this Sunday, too. Let’s take a look at what’s on the Piercy menu this week…

Menu Monday

Dee’s Menu

Monday

David has a board meeting for the volunteer fire department at 6 p.m. We just can’t seem to eat that early so it will most likely be around 7:30. This is a meal that I can “hold” if his meeting runs late. 

  • lemon pepper chicken
  • baked potatoes
  • salad
  • steamed broccoli
  • biscuits

Tuesday

David and I will be heading to Oklahoma City for a little mid-week getaway. We will eat dinner somewhere in the city. 

Wednesday

We are attending an arts event at the state capitol during the day and will likely have an early supper before heading home. We have some very dear friends up there whom we haven’t seen in quite awhile. If they are free we may see if they’d like to have dinner with us. 

Thursday

Our church is hosting a passover celebration and then a Maundy Thursday service during which the choir will be singing. The passover observation isn’t a full Seder meal – just a symbolic one – so we will eat after the service. I’ll have the meat in the slow cooker and the rest of the meal prepared in advance so we can eat as soon as we get home. 

  • barbecue baby back ribs in the slow cooker
  • homemade coleslaw
  • cheesy cauliflower
  • corn

Friday

I have a board meeting at 3 p.m. and then W=we have a Good Friday service at 7 p.m. at church (the choir will be singing so I’ll need to be there early). We’ll likely just eat a quick meal of leftovers before the service. 

Saturday

  • turkey breast in the slow cooker
  • homemade cranberry sauce
  • mashed potatoes and gravy
  • green beans
  • biscuits 

Sunday

We are planning to spend Easter with my parents. If the weather is nice we may pack a picnic lunch and go to the lake. 

  • turkey and cranberry sandwiches
  • homemade potato salad
  • dessert (haven’t decided what that will be)

I am loving my Instant Pot. Not only is it a pressure cooker but it can also be used as a slow cooker. The best part is that it also has a sauté feature so I can brown meat in it first then switch to slow cooker. That means one less pan to wash…always a good thing!

    I love that you’re making turkey with cranberry sauce in April. I don’t know why we only have that 1-2 times a year. I may have to make this soon. Sounds so good!

      It’s one of my favorite meals and so easy to put a turkey breast in the crockpot. The only issue is that I was unable to find a turkey breast at Apple Market. I’m going to be in the city so I’ll look there. Otherwise I may have to do chicken, instead. I do have some cranberries in the freezer…just wish I had thought to pick up an extra turkey breast during the holidays.

    Right now I’m continuing to juggle workmen with everything else, so I’m forced to play it by ear when it comes to dinner plans. It’s rather frustrating, but there’s not much I can do about it.

    We aren’t doing anything special for Easter. Well, there will be chocolate eggs involved in our day, but that’s about it.

      Ah, the dreaded workmen situation. I think you deserve at least one nice dinner out – or takeout. And chocolate eggs are the best!

        I was really good… We only had takeout twice all week, and cooked the rest of the time. 😉
