Menu Monday ~ September 11, 2017

Despite a few evening activities this week I’ve worked out meals that will still allow me to cook most nights. We’ve eaten out far more than I would like recently and I’m ready to get back into the kitchen!

Menu Monday

Dee’s Menu

 

Monday

Mondays are always busy days for me around the house so a slow cooker meal is a good idea.

  • roast in slow cooker (or slow cooker function on Instant Pot)
  • carrots, potatoes and onions (also in slow cooker)
  • salad
  • biscuits

Tuesday

David and I both have a meeting at 5 p.m. That’s another part of the reason I’m cooking a roast on Monday – easy meal from leftovers!

  • burritos made with leftover roast beef
  • chips and salsa
  • lettuce and tomato salad

Wednesday

I have choir rehearsal at 7 p.m. so easy cleanup is a priority for me. One pot meals are perfect for this. 

  • vegetable beef soup (using the last of the leftovers from Monday’s roast)
  • dumplings in the soup

Thursday

  • spaghetti (I’ll simmer the sauce all afternoon in the oven)
  • French bread
  • salad

Friday

At home date-night!

  • roasted chicken
  • mashed potatoes and gravy
  • green beans
  • salad
  • a nice bottle of wine

Saturday

We have a music event this evening at a local coffee shop which serves delicious food. We’ll probably eat there. 

Sunday

Mexican food after church and save half for a light supper after Music in the Park.

    I’m doing better than I expected at keeping to my menus. I’m having the odd day where I have something else, or end up making more of something so have something that was originally planned for one day for two days instead. But I’m mostly keeping to my menus, and I’m remembering to make them, so there’s progress. There’s less take-away or eating out too, which is a good thing.

    Anyway, here’s this week’s menu:

    Monday: Pizza. I know, I said there’s less take-away, and the first thing I list is pizza. Hey, I said there was less, not none. 😉
    Tuesday: Cheesy mixed vegetable fries.
    Wednesday & Thursday: Vegetable korma with brown rice and pitta bread (which I’m determined to actually make this time). I’ll make enough to have leftovers for Thursday.
    Friday & Saturday: Quiche and potatoes with mixed vegetables.
    Sunday: Coconut bacon and sweet potato fries with cauliflower and broccoli cheese.

      I don’t always stick to mine 100% because sometimes plans change. But it at least gives me a starting point.

      Vegetable korma sounds delicious. I love Indian food!

        I love Indian food too, but hubby doesn’t. He loves Chinese, but not Indian for some reason. More for me that way though, so I don’t mind too much. 😉 Oh, and – in case you’re wondering – I did finally get my korma.

          My husband is a bit like that, as well. Loves Chinese but not as fond of Indian food. He’ll eat it if I cook it but wouldn’t go out of his way to order it in a restaurant. Glad you got your korma! My mom loves Indian food and there is a great Indian restaurant in the nearest city. It’s about time I take her again.
