Meatless Meals: The Benefits of Eating Less Meat
5 Vegetarian Meals
Who doesn’t love tacos? Traditional ground beef tacos are delicious, of course, but well-seasoned lentils make an excellent substitute. Take the time to fry some corn tortillas and top the lentils with cheese, lettuce, tomato, sour cream or whatever else you like on tacos and you won’t even miss the meat.
Sour Cream and Green Chili Enchiladas
This is my son’s birthday meal request – it’s THAT good! I used to make these with shredded chicken but I don’t even bother anymore. You won’t miss it at all.
Black Bean Patties with Corn Relish and Avocado Cream Sauce
I’m sorry this one doesn’t include a photo. I shared this recipe years ago before I started trying to be all professional here. 😉 But it is truly delicious and worth the bit of extra trouble.
Macaroni and Cheese with Caramelized Onions
This one is always a crowd pleaser at potlucks. Serve it with a crisp green salad and a cooked vegetable (whiskey-glazed carrots are our family’s favorite with this!).
Quick and easy…makes a perfect weeknight meal.
Let me know if you try any of these. And if you have your own favorite meatless meals please share in the comments. I’m always on the lookout for new recipes.

Chilli and curry are other dishes you can make meat-free and the meat-eaters in the group won’t even miss the meat. With chilli you can just make it a three bean chilli or something, and mushroom curry is a tasty meat-free curry option.
P.S. I know – if I’m remembering correctly – you personally can’t have mushrooms. But it’s an option for a lot of people. I’m sure you could find something to substitute for those mushrooms.
I really do wish I weren’t allergic to mushrooms because they make such a good meat substitute.
