5 Vegetarian Meals
Who doesn’t love tacos? Traditional ground beef tacos are delicious, of course, but well-seasoned lentils make an excellent substitute. Take the time to fry some corn tortillas and top the lentils with cheese, lettuce, tomato, sour cream or whatever else you like on tacos and you won’t even miss the meat.
This is my son’s birthday meal request – it’s THAT good! I used to make these with shredded chicken but I don’t even bother anymore. You won’t miss it at all.
I’m sorry this one doesn’t include a photo. I shared this recipe years ago before I started trying to be all professional here. 😉 But it is truly delicious and worth the bit of extra trouble.
This one is always a crowd pleaser at potlucks. Serve it with a crisp green salad and a cooked vegetable (whiskey-glazed carrots are our family’s favorite with this!).
Quick and easy…makes a perfect weeknight meal.
