This is going to be another one of “those weeks”. I’ll spare you the details but as you’ll see from the scanty menu, this will be a busy one.
Monday:
- Corn Crab Bisque Soup
- homemade rolls
Tuesday:
- beans (I soaked pinto beans Sunday night and will cook in crockpot Monday)
- homemade flour tortillas (unless I chicken out and buy some)
- “fixings” ie. lettuce, tomato, green onion, cheese
- salad
Wednesday:
- do-it-yourself leftovers night
I have an afternoon hair appointment and then if all goes according to plan, I am going with David to Tulsa after he gets off work. He has to fly out of the the Tulsa airport early Thursday morning for a one day trip to St. Louis. I’ll stay at the hotel in Tulsa and then Friday morning we will drive to Joplin, Missouri. We will return on Saturday. At least that’s the plan for now!
