Day Eight…

We are coping with an ice storm here in Oklahoma today and tomorrow. Thus far, we haven’t been hit very hard but there’s been a lot of moisture today and it’s sure to be icy tomorrow. We are currently safe and cosy at home with a nice fire in the fireplace and full tummies. For dinner tonight we had buffalo burgers with caramelized red onions and homemade bread and butter pickles, with baked potatoes. Very tasty!

I haven’t bought anything today but David picked up more baking potatoes on his way home. He was supposed to have spent the night in Dallas tonight but with the bad weather, his boss decided to take an earlier flight so he got to come back home. I had only had him get two potatoes yesterday as I didn’t think he would be here. He didn’t want to just buy one potato at the store so he bought four. We now have three extras for another meal. I don’t know how much he paid for them but the ones he bought yesterday were $1.22. He didn’t ask me to pay for these today but I’ll add it into my totals anyway. I’m going to guesstimate them at $2.44.

Total: $31.15

    How do you caramelize your onions? Personally, I do two onions at a time with 2 Tbls. butter and one clove of garlic finely minced with salt and pepper. However, I’m always looking for more ideas on how to amp it up.

    I sliced part of a red onion and cooked it slowly in some butter and a little brown sugar.
