David isn’t all that fond of fish so when he is away, Chris and I often take the opportunity to have fish or seafood of some sort. For some reason I can’t recall, I had bought a jar of Archer Farms brand basil pesto cream sauce at Target a couple of months ago. I’d never tried it before but for some reason it ended up in my cart and then in my pantry. I decided tonight was a good time to give it a try.
I had six small tilapia fillets in the freezer. Ordinarily I would cook four of them for the two of us but I decided to just cook three since the sauce would be rich. Besides, I’m trying to cut back on my portion sizes. That means I still have enough for another fish dinner for Chris and myself.
I cooked them in a bit of olive oil in a skillet, lightly seasoning them with garlic salt, Creole seasoning and freshly ground pepper. When done, I spooned some of the basil pesto sauce over the fish and cooked a minute or two until heated through. I served the fish with rice and broccoli (frozen). Chris said it was really good.
One day down with no money spent…
