My parents are retiring and today was their last day at work. I invited them over for a little celebratory dinner tonight. I made jambalaya from the recipe I got from a friend in New Orleans, homemade potato salad, layered salad (lettuce, bell pepper, green onion, celery, frozen peas, hard boiled eggs, bacon, cheese, more mayonnaise than I care to admit), and freshly baked French bread from our favorite restaurant. I wore my French Quarter apron while I cooked and played my “Best of Louisiana” cd. The meal was perfect, if I do say so myself. And I do. We had lemon cake with a glaze of freshly squeezed lemon juice and powdered sugar for dessert. We were all absolutely stuffed but the good thing is that I have lots of leftovers for the long weekend. I could have made smaller batches of everything but since all three dishes are fairly labor intensive I figured I might as well make larger quantities and then not have to cook over the next couple of days. I’ll probably still have to freeze some of the jambalaya but that’s a nice treat to have in the freezer anyway.
So, it wasn’t New Orleans but until October it’s the best I could do.
