Pantry/Freezer Challenge Month Update
I’m starting to see a little progress in terms of space in my freezers and pantry. Things I’ve used up in the past week:

Our weekly menu…
It’s Thursday when I’m writing this post and we are on track for our planned menu so far. David was out of town Tuesday night so Chris picked up sushi for us. He didn’t get home until almost 10 p.m. last night so again, it was just Chris and me for dinner. I took advantage of that and made fish (David is not a fan). I thought I had cod in the freezer (and it may just be buried a little deeper than I looked) but I had flounder which was fine. I pan fried it instead of baking.
I’m getting ready to fix dinner after I finish this post. I have frozen chicken breasts from Aldi that are pre-seasoned with garlic and herbs. I will line a baking sheet with foil and cook the chicken along with red potatoes, Brussels sprouts, red bell pepper, squash and red onion. I’ll probably fix a green salad to go along with this.
