Ever since I can remember I’ve loved a good bleu cheese salad dressing. Or roquefort, but you don’t seem to see that as much anymore. There are several good commercial brands available but I decided to try to make my own.
I found this recipe and used it as a starting point. It tasted fine but I thought it was way too thin and runny. Here is my adaptation:
Ingredients:
- 3/4 cup bleu cheese crumbles
- 1/4 cup buttermilk
- 1 tbls. fresh lemon juice
- 2 tbls. mayonnaise
- 2 tbls. sour cream
- 1 tbls. finely chopped green onion
- 1/4 tsp. sugar
- salt and pepper to taste
(There is no sour cream in this photo because it wasn’t in the original recipe.
I added it to improve consistency.)
Instructions:
Mix about half of the bleu cheese crumbles with the buttermilk, mashing with a fork. Add lemon juice, sour cream, sugar, salt and pepper. Mix well then stir in remaining bleu cheese crumbles and green onion. Pour ingredients into a glass jar, screw on lid and shake well. Refrigerate for at least a couple of hours before using (if possible).
This makes a nice, thick, creamy dressing which is delicious on a wedge salad (as shown in the link to the original recipe).
