I totally forgot to take a picture so you’ll just have to use your imagination. I tried Pioneer Woman’s recipe for “Perfect Potatoes au Gratin” and it was as yummy as I suspected it would be. Her recipe calls for 1.5 cups of heavy cream (!) and half a cup of milk which I’m sure is quite delicious. I only had about a quarter of a cup of cream and perhaps half a cup of half and half. I combined those and made up the difference with milk. The sauce was still thick and creamy so I can’t imagine why it would be necessary to use all that cream. Unless you’re trying to beef up your calorie intake and that’s not part of our agenda here in Dee’s Kitchen.
I had planned to thaw some bits of ham I had in the freezer for David’s portion but forgot to do so. I offered to heat up some of the leftover bison and/or beans from last night but he was fine with our planned meal “as is”. In addition to the rich and creamy potatoes, I made Pioneer Woman’s “Whiskey Glazed Carrots”, steamed broccoli and a big salad with romaine lettuce and fresh spinach.
I really do wish I’d remembered the picture as it made for a really attractive and colorful plate. It’s not a challenge at all to skip the meat when one’s plate is filled with tasty, colorful organic vegetables.
On the other hand, some people think that even one meatless meal per week is part of a political indoctrination scheme:
