Monday:
I have a couple of very thick pork chops leftover from Saturday night so that will make an easy dinner.

- carrots
Tuesday:
I think we should take advantage of the beautiful weather and grill. Maybe even eat on the patio.

Wednesday:
- brisket in the crockpot
- rice
- salad
- corn
Thursday:
I recently pinned this recipe on Pinterest and I’m going to give it a try. It calls for leftover brisket which is why I planned it to follow last night’s dinner.

Friday:
We will be attending a community dinner for David’s volunteer fire department. I will be bringing a dessert.
Saturday:
We are attending a wedding Saturday evening.
Sunday:
If the kids are around we’ll do “Family Dinner”. If not, David and I will just eat leftovers.

Those pork chops were DELICIOUS!! I think I may also do a brisket this week. There are SO many things you can make with leftovers, and it also freezes SO well. I look for those things when I make a big dinner, since I’m cooking for one!!

Thanks, Roz. If I had realized how thick they were and had another 45 minutes to cook them, they would have been even better. That’s what I’m going to do tonight. I’ll make more gravy then slice up the pork chops in it and let simmer until truly tender.
I haven’t cooked a brisket in a long time but if I can find a big one I’m going to freeze part of it, too.

Monday: veggie burger and salad.
Tuesday: cheesy mixed fries (the “mixed fries” being a mixture of sweet potato fries, and regular fries).
Wednesday: cheesy mash with broccoli.
Thursday: I have roleplaying, so I’m making extra on Wednesday, that way I can eat the leftovers after my game on Thursday.
Friday: scrambled eggs with mini potato waffles and baked beans.
Saturday: veggie wraps.
Sunday: I haven’t decided for sure yet… I’ll decide when we go to pick up the weekend’s veg, based on what I can get.
