Dee’s Menu ~ Salad Recipes
Our local farmers market is open and I’m looking forward to all the lovely produce available throughout the summer months. I love a good salad and will be including a lot of them in the coming weeks’ menus. To kick start the season of fewer clothes we are focusing on salad recipes this week. Let’s take a look…

Monday
I love the fact I can prep all the ingredients for this salad and then just toss them together at dinnertime.
Southwestern Chopped Salad With Buttermilk Ranch Dressing
Tuesday
It’s usually Taco Tuesday around here but for hot days we enjoy this taco salad instead.
Wednesday
I love fresh green beans and I’m looking forward to using them in this next salad.
Thursday
There are any number of delicious pasta salads and we love this one.
Friday
I like to make Friday dinners a little more “special” and this steak salad looks like it will be perfect for kicking off the weekend.

Saturday
A chicken Caesar salad is always a winner and this one, while not exactly traditional, looks delicious.
Sunday
Garlic, lime and pineapple? I’m sold!

You won’t be catching me in a swimsuit any time soon, salad or no salad. Still, salads are a good meal option, especially for those days when you’re not sure exactly what time you’ll be able to sit down to dinner.

Ha! I felt the same way about the swimsuit thing. But I convinced myself that I wasn’t going to miss out because of my body image issues. Besides, David was the only one there I knew and he’s seen me. 😉 Still, I’m more determined than ever to shed some pounds before our trip to Belize this fall.

I made a really good salad today and it was made from leftover salad! I used the concept of the 24 hour layered salad and used what I had to make the first salad. I had about half that left, even though I made a much smaller one, so today I decided to do the ‘chopped sub salad’ trend using those leftovers. I chopped pepperoni, a bit of ham, pimento stuffed olives, and pepperoncini. I added a glug of Olive Garden Italian dressing and a dash of oregano. Then I chopped the salad together and served it up with a sprinkle of homemade croutons. Oh My! That was a delicious salad !
Now I am off to go look over these and see which ones I will add to our summer menu.

That does sound good! We had taco Frito salad last night. I usually make a dressing with sour cream, ranch dressing and salsa but I had just bought a bottle of Catalina dressing on sale and used that instead. That’s the way my mom used to make it. I like both versions. I made a huge bowl of it and between the three of us we polished it off.
