I’ve come to realize that my plans must be more “fluid” these days. I don’t always (ever?) know what my week is going to look like. I think my best bet is to plan 5 nights of meals and then if we don’t use all of them I’ll carry over to the next week. So if it looks like we are having the same thing rather often it is likely because of this.
Monday:
David and I were in the city this weekend to see James Taylor in concert – and he was fabulous! Our vegetable consumption over the weekend was rather slight so tonight we’ll make a meal out of just veggies. Plus one of David’s employees gave us a big bag of squash which I need to use.
- fried squash, onions, and bell peppers with a little grated cheese on top
- fresh corn on the cob
- salad
Tuesday:
- Coconut Vegetable Curry
- jasmine rice
- fresh fruit
Wednesday:
- black bean enchiladas
- salad
- chips and salsa
Thursday:
- homemade waffles
- bacon
- eggs
- fruit
Friday:
- whole roasted chicken
- mashed potatoes
- green beans
- salad
- deviled eggs
