Monday:
Lisa and I are doing our monthly shopping in the city and I’ve got a meeting at 6 p.m. This sort of day calls for something simple so I’ll put the beans in the crockpot on low before I leave home. I’ll have the rice pre-measured and the rice cooker sitting out so David can start the rice when he gets home from work. I should be home between 7 and 7:30 and dinner will be ready when I get there.

Tuesday:
The kids are all coming over for game night. I’m making it easy on myself and picking up pizzas from our favorite Italian restaurant. That way everyone gets the kind they like and clean-up is minimal for me. I’ll make a big salad to go with the pizzas but otherwise this is a cooking-free night for me.

- tossed green salad
- some type of dessert – homemade chocolate chip cookies?
Wednesday:
David will be in Houston on business so I’ll just eat something simple before choir rehearsal.

Thursday:
I have another meeting this evening so I’ll make up the enchiladas ahead of time and put them in the refrigerator. I can then stick them in the oven and start the rice just before my meeting. All I will have to do when I get back home is make the guacamole.

Friday:
This will have been a busy week for both of us so unless we get an offer too good to pass up, I think we will enjoy a quiet evening at home. I’ll serve dinner in courses by candlelight and maybe splurge on a really good bottle of wine (or two!).
First course: asparagus soup (I’ve been saving the end pieces in the freezer)
Second course: mixed green salad with balsamic dressing
Third course: pasta with olive oil, garlic and cherry tomatoes
Fourth course: Balsamic Bruschetta Chicken and fresh green beans
Fifth course: homemade creme brulee and coffee
