Monday:
I cooked a pot roast the other night so I’m going to use the leftovers to make this:
- vegetable beef soup with dumplings
Tuesday:
- red beans and rice
- corn bread (make extra to freeze for Christmas dressing)
Wednesday:
I’ve got an appointment with my chiropractor at 4:30, Advent service at 6:30 and choir rehearsal at 7. I think I’ll just stay in town between the doctor appointment and church…maybe pick up some stocking stuffers and run errands…so it looks like we’ll each be on our own for dinner. Or if David gets off work in time perhaps we’ll meet in town for an early dinner and then he can go to church with me. Flexibility, folks – it’s a necessity!
Thursday:
- black bean quesadillas
- tortilla chips and salsa
Friday:
If the Mayans were correct this will be our last meal. We’ve been invited to an “End of the World” party but we’ll eat first since I think they are only serving champagne.
- ham
- baked potatoes (bake extra for tomorrow’s potato soup)
- homemade cranberry sauce
- salad
- peas
- biscuits (bake extras for tomorrow and for Christmas dressing)
Saturday:
In order to accomodate everyone’s schedules and not be rushed we are celebrating Christmas with our kids Saturday morning. I’m not sure how long everyone will be here but I’m planning three meals just in case we have the crew all day. I’ll bake extra potatoes Friday to use for the potato soup.
Breakfast:
- waffles
- bacon
- mimosas
Lunch:
- potato soup
- leftover biscuits
Dinner:
- lasagna
- salad
- garlic bread
How are your holiday plans shaping up? Have you finished your shopping? Other than a few little things for stockings I think I’m done!
