It’s Christmas week so part of this week’s menu will reflect that.
Monday
I made lentil tacos Saturday night and had a lot leftover. I’m going to make soup out of it.

Tuesday

Wednesday
David is having his company Christmas party at noon. He’s bringing in barbecue and there is usually some leftover. I’ll make some potato salad to go with it for our dinner. I’m also bringing homemade baked beans to my cousin’s on Thursday so I’ll make these Wednesday and an extra pan for us.

Thursday
We have our extended family Christmas dinner at noon at my cousin’s. I’m bringing a ham, homemade baked beans, homemade cranberry sauce and maybe a dessert. After our candlelight Christmas Eve service at church, we will have our traditional light supper while watching the Charlie Brown Christmas movie.

Friday
The kids, our niece and her boyfriend, my parents, a cousin from out of state and possibly a friend’s son will be with us. Our traditional breakfast:

I’ll put a turkey breast in the crockpot and we’ll have the following meal late afternoon:

- potato casserole
- cranberry sauce
- corn
- rolls

Monday: since we always do something on the 21st to at least acknowledge the Winter Solstice, we ordered pizza and cheesy garlic bread, and then made it more special by also ordering a chocolate ice-cream cake (we rarely have dessert, and it’s even more rare for us to add some to a take-out order, hence it being a “special” thing… Plus, I’d never ever tried ice-cream cake before, so it was a new thing for me).
Tuesday: pasta with pumpkin sage sauce… The last of the pots I had in the freezer from Halloween, as it happens
Wednesday and Thursday: whatever we’ve got in the freezer and cupboards that’s quick and easy to make, since I don’t want to be doing much cooking in the days leading up to Christmas.
Friday: my Christmas dinner will consist of butternut squash and sweet potato mash, roasted parsnips, roast potatoes, carrots, sprouts, home made stuffing, and cranberry sauce (I want the stuffing and cranberry sauce, even though I’m not having any meat to go with it).
Saturday and Sunday: there will be leftovers from Christmas dinner, which should feed me over the weekend.
(I know some people probably think it weird for me to just be saying “me” and “my” when hubby lives here too, but we generally have different menus, since I’m a vegetarian and he’s not).

It was pretty good. I don’t think it’s going to become a favourite cake of mine, but I did enjoy it. Hubby doesn’t mind that I didn’t absolutely love it though, because it meant I didn’t complain when he ate most of it, LOL!

Ha! I’ve had it a few times and it didn’t do much for me. I prefer my cake and ice cream separately.
