Menu Monday ~ December 28, 2015

December 28, 2015 By Deanna Piercy 4 Comments

We’ll be easing back into a bit more “normal” menu this week after all the holiday indulgences. I think I’ll wait a few days before getting back on the scale, though

Menu Monday ~ December 28, 2015

Dee’s Menu

Monday

We’ll be using up the last of the turkey today. Last night I made a big pot of turkey noodle soup which was delicious. I’ll actually be sorry to say goodbye to turkey as it’s a favorite of mine. But…moving on…

  • green chili turkey enchiladas
  • Mexican rice with peas and corn
  • salad

Tuesday

  • split pea soup (I saved the broth from a ham I cooked Christmas Eve so I’ll include that)
  • biscuits or homemade bread

Wednesday

  • homemade pizza
  • salad

Thursday

  • spaghetti
  • salad
  • green beans
  • garlic bread

Friday

New Year’s Day!

  • ham
  • rice
  • black eyed peas
  • cooked cabbage
  • corn bread

Saturday

  • leftovers!

Sunday

  • Mexican food after church

~~~~~
What’s on your menu this week? Do you have any traditional dishes you eat on New Year’s Day?
    I don’t have any traditional new year dinner menus. When I was growing up we always had a chicken dinner that was identical to our Christmas day turkey dinner, except for the chicken in place of the turkey, of course. Now I don’t eat meat though, and do something different each year, depending on what I feel like. This year I’m making a spinach and vegetable quiche.
    I don’t have a proper menu this week. I know I’m doing the quiche for Friday’s dinner, and there will be leftovers for Saturday for sure, and possibly also Sunday. Other than that… *shrugs*
      My family never had a traditional New Year dinner, either. A few years ago we spent a few days around New Year’s with friends in New Orleans and this is basically what they do. We enjoyed it and I’ve done it a few times since. The nice thing is that it provides good leftovers for a couple of days. 🙂
        Leftovers are always good… Especially when you have them to fall back on after a busy few days, so can take advantage of the oppertunity to relax while still eating tasty homemade food!
