I’m writing this post Sunday afternoon. I’ve looked at the week ahead in order to plan our menu for the week and I’m not entirely certain what our plans will be. I suppose I’ll just plan something for each night and if we end up not being home or if something comes up I’ll just scrap that night’s plan. Or better yet, save it for next week!

Monday
I went digging in our big freezer the other day looking for something and was confronted with the truth. I need to start using up a lot of what’s in there AND it is in desperate need of defrosting. One thing we have in there are several packages of tortillas. I also have the other half jar of enchilada sauce from the other day so I think Enchiladas: Round Two sounds like a plan.

Tuesday
Lisa and I are going to the city to do a little Christmas shopping but we are planning to be back in time for dinner. That means I need something quick and easy.

Wednesday
I have a hair appointment in the afternoon, Advent service at 6:15 and choir rehearsal at 7:00. I have a fairly short window of time in between for cooking. I ordered an Instant Pot and it should be here Tuesday. I think this would be a good time to try it out. I’ll go ahead and cook the rice in my rice cooker and the beans in the Instant Pot.

Thursday
- Sweet Potato Red Curry Chili (in the Instant Pot)

- French bread (I’ll buy some from our local Italian restaurant. The owner makes fabulous bread. Half the time he won’t even charge me for it.)
Saturday
I suspect we’ll have leftovers from one or more meals this week. I’ll serve those with a nice salad.

I have no idea what I’m eating this week. I had a veggie burger with some salad for dinner last night (Monday night). But haven’t even decided for sure what I’m having tonight, let alone the rest of the week.

Some weeks are like that. Ha! Honestly? If I weren’t blogging my menu every week I’m not sure how on top of things I would be. It keeps me accountable.
