Monday:
We have had snow on the ground since LAST Sunday and awakened to icy roads today. Also, it’s supposed to snow again tonight. Sigh…
- Enchilada Pasta
- salad
Tuesday:
David is supposed to go on a business trip for a couple of days although it remains to be seen if he’ll be able to make it to the airport. If it’s just me here, I’ll make some vegetable soup. If David ends up not going I’ll add grilled cheese sandwiches.
Wednesday:
I’ve got a church meeting and then choir rehearsal. I may just grab something in town in between.
Thursday:
- homemade macaroni and cheese with caramelized onions
- peas
- salad
Friday:
Valentine’s Day! We’ve come to the conclusion that Valentine’s Day is the worst time to go out to dinner, at least in our small town. Every restaurant is packed and it’s rarely worth it. Instead, I’ll fix a nice dinner at home at we’ll go ahead and pop the cork on that nice bottle of Veuve Clicquot I bought for New Year’s Eve which we never opened.
- wedge salads with homemade bleu cheese dressing
- filets
- baked potatoes
- asparagus (if I can find any, otherwise green beans)
- dessert – yet to be determined – might buy some chocolate covered strawberries
