As I am writing this on Sunday evening, I have the last of my international menu recipes simmering (North African Meatballs). It smells delicious! This coming week doesn’t have a theme although I do have a special meal planned for Tuesday – Mardi Gras. Let’s take a look…

Dee’s Menu
Monday
I never did end up making lasagna last week. I’ll do a simplified version in the skillet.
- skillet lasagna
- salad
- garlic toast
Tuesday
Today is Mardi Gras and so this only seems fitting:
- jambalaya
- potato salad
- French bread
- bread pudding
Wednesday
Today is Ash Wednesday, the start of Lent. We’ll be going to the Ash Wednesday service at church so this will be a good day for a one-pot slow cooker meal.
- vegetable soup in the crock pot
- toasted French bread
Thursday
- roast
- fresh corn on the cob
- Cauliflower, leek and cheese gratin
- salad
Friday
I’m going to try to do fish or vegetarian meals on Fridays throughout Lent.
- sweet and spicy shrimp (I’ll share the recipe at some point.)
- cheesy grits
- steamed broccoli
- salad
Saturday
At the time I’m making this menu it looks like it will be fairly warm Saturday. Sounds like a good day to grill.
- grilled cheeseburgers
- French fries
- fresh fruit salad
Sunday
You know the drill…Mexican food after church and save half for dinner.

I love how you thought about Mardi Gras for your menu planning. We’ll also be having fish a couple of times this week with Ash Wednesday and the start of Lent.

I never observe lent. I use Mardi Gras (more commonly called “Shrove Tuesday” or “Pancake Day” here) as an excuse to have pancakes for dinner. But that’s about it. But then, since I’m a vegetarian, I’m still technically having meatless meals for lent… Even if it’s only because that’s my usual diet. 😉
Anyway, yesterday (Monday) I had cheesy bean enchiladas (using the recipe you posted recently). Tonight (Tuesday) I’m having pancakes with maple syrrup. Hubby says he’s having pizza on Wednesday, so I think I’ll join him on that one. I haven’t figured out the rest of the week though, which you’re probably not surprised to hear, since that’s often the case.
