A new week and a new month! Can you believe it’s already February? How is your weather? I’m writing this on Sunday afternoon and it is a glorious day. It got up in the high 70s so I spent over an hour relaxing in the backyard soaking up the sun. I’m trying not to think about the prediction for snow on Wednesday. Let’s see what’s on our menu for the week.

It was beautiful here on Saturday. So much so that I sat in a ray of sunshine cuddling the tortoise for ages so Artemis could soak up some natural sun (the tortoise has a UV lamp, but natural rays are benificial when possible). It’s been damp and overcast since then though. No sign of snow here, but I’m crossing my fingers, and wishing the people who had it and don’t want it could send me some.
Anyway, love the menu for this week. Good luck at the blogger conference. Hope you learn loads, and have a great time with your daughter while you’re at it.
Here’s my menu for this week:
Monday: Thai-style jackfruit salad wraps (I’d originally had other plans for the jackfruit I wasn’t going to need from the jar for burgers, but saw a recipe for Thai jackfruit salad on a friend’s blog, so made a simplified version of it, which I stuck in some wraps – along with some lettuce, cress, and vegan mayo).
Tuesday: jackfruit burgers with fries and salad (since I didn’t end up making it on the weekend).
Wednesday: rice and bean pie and salad (if my idea for the veganized version works out I’ll eMail you with what I did, and if it doesn’t I’ll try that cottage cheese recipe you found for me and see if that works, but at least if it doesn’t work I’ll have the salad to eat in the meantime).
Thursday: spring rolls and potato wedges with dipping sauce (because Kelly found some vegan spring rolls when he was shopping yesterday, and was disappointed I’d planned my meals up until Wednesday, so I said I’d have them Thursday… It’s only a small box with a few in though, hence the addition of potato wedges too).
I haven’t figured out Friday through Sunday yet. I was so busy thinking of ideas for veganizing the pie thing that I didn’t think much beyond it. Oops! Good thing there’s a fruit and veg shop just up the road. 😉
