Are you ready for a new week? I am! David and I will be going on a little midweek getaway and I’m pretty excited about that. I’m also in the mood to try some new recipes so let’s take a look at what I’ve got planned.

DEE’S MENU
Monday
I’d like to get back into the habit of doing Meatless Monday.
- macaroni and cheese (in the Instant Pot)
- glazed carrots
- fruit smoothies
Tuesday
David and I have a meeting at 4:30 which likely will last until nearly 6. Slow cooker to the rescue!
- Slow Cooker Balsamic Chicken
- brown rice
- tossed green salad
Wednesday
David and I are going to the city for the night as our early Valentine’s Day celebration. Much less crowded this week! We’ll have a lovely dinner at Mahogany Prime Steakhouse.
Thursday
Friday
Lisa and I will be doing our monthly grocery shopping trip this day so we’ll likely eat dinner in the city. The guys are on their own!
Saturday
- Hawaiian BBQ Pork Chops
- rice
- steamed broccoli
Sunday
Mexican food or leftovers, most likely!

Thanks, Tori. Although last night’s plans changed because we had David in the E.R. until about 9 p.m. Fortunately he’s okay. We ended up with takeout because I wasn’t going to cook that late.

Would you be willing to share the Instant Pot Mac & Cheese recipe you use?

Sure. Here’s the link: https://www.platingsandpairings.com/best-instant-pot-mac-cheese/ I don’t add the nutmeg and instead of evaporated milk I use half & half because that’s what I’m more likely to have on hand. I also find it doesn’t take anywhere near 12 ounces of it. I start with about 3/4 of a cup.
One of these days I’ll share my adaptation here on the blog. I’m still working with it. Oh, I also add garlic powder or dried garlic granules, plus some Creole seasoning. I do prefer my baked version of mac and cheese with the caramelized onions on top but this is much quicker and only uses the one pot. Plus you don’t have to heat up the kitchen with the oven so it’s a better choice in the summer.
