Another week, another menu plan! This week features a couple of old favorites PLUS a new-to-me recipe using the Instant Pot.

Dee’s Menu Plan
Monday
- Leek, Potato and Corn Chowder
- biscuits
Tuesday
Lisa and I are doing our monthly grocery shopping in the city so our guys will be on their own for dinner. I’m doubling the chowder from Monday so David and Chris can just reheat it for dinner.
Wednesday
David will be out of town on business so I’ll make myself a salad or smoothie for dinner.
Thursday
I am meeting David in the city when he flies back from his business trip. We have reservations at our favorite hotel for an early Valentine’s Day celebration.
Friday
- smothered pork chops
- rice
- salad
- peas
- sauteed apples
Saturday
Sunday
Mexican food after church and save half for dinner.

We had Chinese last night (Monday night) because we had guys here until nearly dinner time finishing up sorting some work. One was doing the electrical part of the controls for the new boiler we had put in a couple of days ago (officially Friday, but a complication caused it to take all of Friday and a large chunk of Saturday to complete, and us to be without heat and hot water over Friday night). The other guy was turning our old gas meter in to a smart meter.
Tonight (Tuesday) I’m having scrambled eggs and hash browns for dinner. But I have no idea about the rest of the week. It will be things that are quick and easy to make though, since we finally have the shelves sorted in the computer room, so want to work on unpacking and organizing the contents of the boxes currently in a pile in the middle of our living room.

I’ll bet you’re happy to have the boiler work done. It’s so disruptive to have workers around. Good luck with the unpacking and organizing!

Absolutely! It was so hard to get things done while they were here, especially since I need to be able to hear to do most things, and many of the tasks they had to do made a noise. Plus, with them messing about with the electric and water supplies from time to time, not to mention my needing to keep out of their way, I got behind on laundry and some other bits of housework too. Spent yesterday catching up with it all. Now I just need to catch up with eMails, finish getting this unpacking and organizing done, and hope I can have time to snatch more than a moment here or there to catch up on my writing projects some time soon.

It is SO disruptive to have people working in one’s home. Glad it’s all done and now you can get on with your projects.

I purchased an Instant Pot 2 months ago but haven’t used it yet due to a combination of a busy schedule and a wee bit of intimidation. The Hawaiian Fried Rice may encourage me to bust that pot out and actually use it.

I’m sorry to say I wasn’t impressed with that recipe. The taste was fine but the texture was off. I would recommend trying it with white or jasmine rice (which will need less cooking time). Also allow time with the lid off after cooking so the moisture evaporates. On the other hand, my jambalaya recipe for the Instant Pot is really good if you want to give that a go.
