This is “No Buy January” so our menu reflects what we have on hand. Other than dairy and fresh produce we are eating from our pantry and freezers this month.

Monday: root vegetable mash (made up of mashed potato, with some sweet potato and carrot mashed in to it) with sweetcorn and minted peas.
Tuesday: cheesy fries.
Wednesday: mushroom and onion pie, roast potatoes, and sprouts.
Thursday: we always make Thursday’s dinner either something simple or take-out, because hubby has roleplaying every week, and I have it some weeks, but since I want to try not to have take-out too often – this month especially – and I want the day off from cooking, I’m making enough on Wednesday so I can just re-heat the leftovers for Thursday’s dinner (especially since I’m making pie for Wednesday, and there’s almost always leftovers with pie, so it’s just a matter of making extra potatoes and sprouts while I’m cooking everything on Wednesday).
Friday: homemade pizza.
I haven’t decided about Saturday & Sunday yet.

I like the idea of making extra for the next day. Sometimes I do that, too. I should plan for it more often, though.

I do it quite often, to be honest… It’s a good way to have something quick and simple on a busy day, without resorting to grabbing take-out. Also, where I’m cooking just for me most of the time, I sometimes end up with leftovers even if I don’t plan for them, so just move my meal plans along a day, or freeze the leftovers for a quick meal I can just defrost and warm up some other time.

As soon as I get my freezer cleaned out and free up some room I plan to freeze some entrees for busy days.
