Menu Monday ~ January 30, 2017

The past few weeks have been crazy as we prepared for a big event hosted by our nonprofit, HMA Foundation. It was exciting, lots of fun and exhausting. Now it’s time to clean my house and get back to a “normal” routine, whatever that means. Let’s start with a menu plan.

Dee’s Menu Plan

Monday

We are going out to dinner with a few of the friends who were a huge help in hosting our event. We decided we all need a night out together for something other than work. 

Tuesday

  • Black Bean Patties with Corn Relish and Avocado Cream Sauce
  • served as tacos
  • tortilla chips and guacamole 

Wednesday

It looks like the weather will be pretty nice (sunny and in the mid-60s). 

  • hot dogs cooked on the grill
  • homemade potato salad
  • baked beans
  • chips

Thursday

I have a meeting this evening so I think a crockpot meal sounds like a good plan. 

  • roast in crockpot
  • potatoes, carrots, onions (in crockpot with roast)
  • tossed green salad

Friday

I’ll use the leftover roast for this meal.

  • stroganoff served over buttered noodles
  • tossed green salad
  • corn on the cob

Saturday

The weather report is cool and rainy. Sounds like a great day to make a pot of chili. 

  • Top Shelf Chili
  • Tex-Mex corn bread

Sunday

You know the drill. Mexican food after church and save half for dinner.

    I had homemade vegetarian chilli and garlic bread for dinner yesterday (Monday) and there was plenty of chilli left, so I put some in the freezer for another day, and made some more garlic bread to go with the rest for today (Tuesday).

    I’m not too sure what’s happening for dinner the rest of the week. We’re at the vet tomorrow afternoon with Star (rat) and it depends what happens with her to how most of the rest of the week will go. Plus we have a new boiler hopefully being installed on Friday, so have to work around the guys being here to do that too.

      I was so sorry to hear about Skye. Hope the appointment with Star goes well and that the boiler installation isn’t terribly disruptive.
