Did you enjoy last week’s French-inspired menu? I want to tell you, that Coq au Vin was delicious. But you know what was surprisingly good? The soup I made from the leftovers. My goodness, was that ever tasty!
This week you may notice a bit of a Mediterranean influence in my menu. I’ve been researching the Mediterranean diet and will be implementing some of the key components in our diet. More fruits and vegetables, beans, lentils, fish…

Hi Deanna,
Your week looks delicious, your pan seared cod with wine and basil sauce looks amazing! If it is as hot up there as it is here, we have now retreated to the indoors to find the comfort of the A/C and the Slow Cooker. Hope you have a fabulous week and thanks for sharing your delicious recipes!

Hello Miz Helen! It is indeed hot here, too. I haven’t tried this cod recipe yet but it sounds so good and we’re going to start eating more fish. Thanks for stopping by and have a great week.

Interesting menu. Not for me… I wasn’t a fish fan even when I ate meat… But still a nice mix there.
As for my menu… Yesterday (Monday) we ordered pizza. Today I just had some fries. Not the healthiest start to the week, but I don’t care. I walked about two miles on Sunday, it’s hot (it’s almost 8:00pm and still around 80F here) and I’ve got a lot to get done this week. Anyway, tomorrow I’m having vegetarian toccos, but I haven’t figured out what I’m having for dinner the rest of the week.
