Monday:
Our local United Campus Ministry (I was on the board for years and served as the president) is doing a fundraiser. Tonight, our local Chili’s restaurant will be donating 10% of our bill to UCM. It’s not my favorite place to eat – in fact, I can’t recall the last time I ate there – but it’s for a good cause and many of my church family will be there. Besides, I won’t have to do the dishes. 😉
Tuesday:
My parents brought back some delicious corn tortillas from California so we’ll be doing “Taco Tuesday”.

*Note: If you haven’t tried these lentil tacos I highly recommend them. I asked David if he’d rather have ground beef, lentils or black beans in his tacos. He said lentils or black beans. Yes, a MAN who actually prefers the meatless option. I did black bean enchiladas last week so that’s why I’m doing lentils this time. Plus, I have a HUGE container of lentils but am running low on black beans.
Wednesday:
- Easy Vegetarian Casserole
- tossed green salad
- fresh fruit
Thursday:
- red beans and rice
- salad
- cornbread
Friday:
- spaghetti and meatballs
- tossed green salad
- garlic bread
Saturday:
I’m hoping to get going early enough to hit the farmer’s market while there is still a good selection. Dinner will then consist of whatever I am able to gather. I’m hoping for fresh corn on the cob, some red potatoes, green beans, squash, peaches…
