Things have been rather topsy turvy around here the past couple of weeks. David has had Rocky Mountain Spotted Fever and been really ill. Fortunately we caught it early and he is finally recovering and back to work. He had very little appetite so our meals consisted of whatever sounded good to him at the time. His appetite is starting to pick up so I’ve gone ahead and made a menu for this week. I’m still focusing on things that I think he will really like. But NEXT week we will get back to our healthy Mediterranean diet!

Monday
- chicken sausages cooked with onions, bell peppers and baby potatoes
- baked cauliflower
- tossed green salad
Tuesday

- soup made with leftover ham, beans and other veggies
- cornbread
Thursday
Tonight we have our monthly music and food truck event. We’ll eat there.
Friday
- lasagna roll-ups
- salad
- garlic bread
Saturday
We are attending a wedding and they will be serving a meal.
Sunday
- patty melts
- coleslaw
