We have yet another busy week ahead of us but I should be able to cook three nights. Let’s take a look at what’s on the menu at Chez Piercy, shall we?
Dee’s Menu
Monday
We are attending a local Open Mic. No, we aren’t performing – ha! David is setting up the sound equipment and there is a musician we want to listen to before we start booking them. This Open Mic takes place at a local coffee bar and cafe so we’ll eat dinner there.
Tuesday
- Pan-Seared Cod in White Wine Tomato Basil Sauce (I ended up making this with chicken Friday night and it was delicious. Will try with fish this time.)
- steamed, buttered rice
- broccoli
- salad
Wednesday
- Vegetarian Lentil Tortilla Soup
- chips and salsa
Thursday
Tonight is East End Eats, a local music and food truck event. We’ll eat there.
Friday
- The BEST Damn Pork Chops
- mashed potatoes
- green beans
- salad
- baked apples
Saturday
We are attending yet another event that includes food.
Sunday
We are back to our former routine of going out for Mexican food after church and saving half for a late dinner after Music in the Park.

We had a good time last night. Aldi’s was closed by the time we got through, though so I’m making salmon instead of cod tonight (I had some in the freezer). I love fish, too!

I hope you enjoy the events, and that they go well. If I could, I might join you for dinner on Wednesday. Also, if you hold the porkchop, Friday’s dinner sounds good to me too. 😉
Last night (Monday night) I had a mushroom and onion omlet with hash browns. Tonight I’m just planning to make cheese, cucumber and tomato sandwiches, because I have a cucumber that needs using up, and that meal serves that purpose while also not requiring much prep time or cleanup afterwards. I’ll be eating a lot of things that don’t require much prep and are low on cleanup for a while. That’s my favourite kind of meal most of the time anyhow, but I’ve started working on arrangements for my backlist of books to be produced in audio, so things are going to be pretty busy around here for the next several months – at least.

I’m finding myself wishing I had a super simple dinner on my menu for tonight. I didn’t get enough sleep last night (oh, let’s be honest – I rarely do!) and just had to give in to a nap this afternoon. Now I’m behind schedule and a sandwich supper sounds lovely. I’ll push on through with the fish, though. Maybe David will volunteer for solo kitchen cleanup and let me get some work done. I should have already posted my book club post for August but haven’t even started it!
