I didn’t make a menu last week because I knew it was going to be a crazy week. We went to a concert in the city Sunday night and got a hotel because David had to fly out at 6 a.m. Monday morning. Rather than take two vehicles I elected to drive back to the city on Tuesday to pick him up.
Wednesday was the 4th of July and we put on a 5-band concert at the park. We finally ate dinner (take out) at nearly 11 p.m. On Thursday we had our monthly live music and food truck event, East End Eats, and ate dinner there. I did whip up something easy in the Instant Pot on Friday which turned out so good I’ll be sharing the recipe soon. On Saturday we were invited to a cookout which was quite lovely. Then David picked up Mexican food for dinner Sunday night. Yes, some weeks are like that.
But we are back to a more *normal* schedule and that means a menu is in order.

DEE’S MENU
Monday
David is out of town on business so I’m on my own for dinner. That’s always a good time for fish or seafood since those aren’t favorites of his.
- blackened shrimp

Tuesday
Taco Tuesday. Need I say more?
- soft tacos (flour tortillas)
- chips and salsa
- lettuce, tomato, green onions, cheese, sour cream (taco toppings)
Wednesday
We have an afternoon meeting so a slow cooker meal will make life easier for me.
- Vegan Slow Cooker Chana Masala
- basmati rice
- naan bread
- sliced oranges
Thursday
Date night!
Friday
I don’t think we have anything planned so it’s a good night for a relaxed meal with candles and a bottle of wine.
- French roasted whole chicken

Saturday
This is one of my favorite summertime meals.
- grilled burgers
- corn on the cob
- french fries
- fresh fruit
Sunday
This has become our easy Sunday dinner. Fast, simple and light.

Your menus are always so interesting.
I’m not 100% sure what we’re having and when, but I know hubby plans to make toccos and homemade pizza at some point, so I’m considering having vegetarian versions and joining him for those. Also, we’ve taken to eating out most Fridays, and calling that our main meal, and we’ll probably do that again this week, since we get a night off from cooking without ordering any take-away, plus get the walk to and from the place (with a chance for me to rest from the walk there while we have lunch).

I haven’t made pizza in ages. I should put that on our menu next week. We had black bean tacos tonight. I cooked some diced onion and bell pepper, added a can of black beans (drained), some sweet corn and seasonings (garlic salt, cumin, chili powder, cayenne). I then warmed the flour tortillas in a little butter, added the bean mixture and topped with tomatoes, sour cream, cheese and hot sauce. Easy and really good!
