It looks like we’ll actually be at home for most meals this coming week. That’s a switch! I’m looking forward to incorporating all the lovely summer fruits and veggies coming into season. And we have a brand new grill which I plan to use regularly in the weeks to come. Let’s take a peek at what’s on our menu for the coming week.
Dee’s Menu
Monday
I used to do Meatless Monday most weeks and would like to get back to that.
- Macaroni and cheese with caramelized onions
- tossed green salad
- glazed carrots
Tuesday
I have an afternoon hair appointment. It’s always nice to come home to a slow cooker meal when I’ve spent the afternoon in town. I didn’t end up making the Swiss steak last week so I think this will be a good day for it.
- Busy Day Swiss Steak
- rice
- baked cauliflower
- salad
- peas
Wednesday
My daughter and I will be in the city all day doing our monthly grocery shop. Keep an eye out later this week for a grocery haul post!
Thursday
I love doing an occasional summer meal of all veggies. After our visit to Whole Foods on Wednesday I’ll be well-stocked on seasonal produce so this is a good day for it.
- corn on the cob
- artichokes
- potato, peppers, onion, squash medley
- French bread
Friday
- grilled chicken with homemade barbecue sauce
- baked potatoes
- green beans
- salad
- fresh fruit
Saturday
We are meeting up with the kids in Norman for lunch to celebrate David’s birthday (belated) and Father’s Day. That will be our main meal of the day so we’ll likely just make sandwiches or something light for dinner.
Sunday
We have Music in the Park every Sunday evening throughout the summer. There are food trucks, too, so we’ll just grab tacos or something.
What’s cooking at YOUR house this week? What is your favorite summer vegetable and favorite summer fruit? Mine are corn on the cob (or maybe fresh green beans cooked with bacon and onion) and peaches. YUM!

Last week was very busy for me and my post was thrown together quickly. Your post has inspired me to try to take more time this week when I make my post. I should at least try to find some of the recipes on the internet and link them to my post. I know some of them are out there in open source. Like I say, I was busy and in a hurry. ::sigh::

I’m with you there… Give me a nice baked potato with corn on the cob and fresh green beans, then follow it up with some fresh peaches, and I’ll be a very happy person! Berries and grapes are my absolute favourite types of fruit in general, but it’s hard to say no to a fresh peach, especially on a warm Summer day, and I love green beans any time I can get them… I love green beans enough that I even tried to grow my own at one point (along with tomatoes and carrots).

I’ll be doing a grocery haul post tomorrow and you’ll see a picture of everything I bought laid out on the kitchen table. I got so much lovely produce, including some peaches from California which smell delicious. Our local peaches are just about to come into season but I couldn’t wait.
